Airport dining with an Orlando pedigree: this is the Petrakis family's Southern kitchen and brewery, the same team behind the Ravenous Pig, operating airside at Orlando International. Doors open at five in the morning and the kitchen keeps going until the last flight pushes back. The board runs from chicken and waffles, shrimp and grits and a smoked turkey hash skillet at breakfast through to smoked brisket sliders, a Southern Cuban sandwich, and fried chicken with Georgia gouda mac and cheese. It is a proper sit-down dining room rather than a grab-and-go counter. Regional ingredients, unhurried cooking, and gate-side convenience.
