CAVIAR RUSSE – Restaurant
Tucked into the ground lobby of the Four Seasons Tower on Brickell Avenue, this has been the New York room's first outpost since 2013. Dinner comes as a three-course tasting or the same dishes a la carte: bluefin tuna with matsutake and coriander, hiramasa with apple and finger lime, steak tartare under egg yolk and black garlic, foie gras with strawberry and yuzu. Caviar threads through everything, from the baked potato with pomme puree to pappardelle with morels and even the creme brulee. Classics run Kumamoto oysters, smoked salmon with blini, and seafood towers. Dinner runs Tuesday through Saturday only.
