A Peruvian kitchen on Southwest 3rd Avenue, set between Brickell and Coral Way, working from recipes the family first cooked in San Ramon, Chanchamayo, and carried to Miami in 2003. Ceviches come classic or dressed in aji amarillo and rocoto creams, with a four-ceviche platter for the indecisive. Causa a lo Senorial is stuffed with crabmeat under an escabeche sauce; conchitas a la parmesana are baked au gratin. Beyond the cold plates sit anticuchos, seco de cordero macerated in chicha de jora, pulpo anticuchero, arroz chaufa flashed over a high flame and jalea mixta. Suspiro a la limena closes it.
