CHOPHOUSE 285 – Restaurant
A walk-in dry-aging room lined with Himalayan salt sits at the centre of this Dearborn Street steakhouse, and a custom wood-burning grill does the rest. Chophouse285 comes from Keith and Laurie Farlow of Englewood's Farlow's on the Water, and it shows: Senepol beef from St Croix, pasta rolled by hand, fish filleted on site. Starters run to crispy Bahamian lobster, Johnny cake stuffers, southern wagyu meatballs, triggerfish ceviche and bourbon-brined Hemingway onion rings. Ten thousand square feet seat more than three hundred, with a private dining room to book. Come here for the dry-aged steak. Stay for the wood-fired smoke.
