Simon Kim's Design District dining room fuses Korean barbecue with the American steakhouse, smokeless grills set into every table and an in-house dry-aging room behind the pass. The Butcher's Feast is the way in: four cuts of USDA Prime and American Wagyu, banchan, scallion salad, savoury egg souffle, kimchi and doenjang stews with rice, and soft serve with soy sauce caramel. A la carte runs dry-aged ribeye, COTE galbi, hanger steak and reserve Japanese A5. Steak tartare with caviar and milk toast is a signature. The wine list passes twelve hundred labels. Lunch runs daily from noon; book well ahead.
