COYOTE – Restaurant
A Collins Avenue taqueria a short walk from the sand, Coyote runs a Mexican menu that reaches well past tacos. Molcajetes arrive in hot lava-rock bowls, red or green, loaded up with steak, chicken, shrimp and chorizo; the seafood version adds octopus, scallops, mussels and mahi-mahi. Tacos cover al pastor with grilled pineapple, birria with consomme for dipping, cochinita pibil on blue corn, ribeye and tempura fish. A whole fried red snapper with garlic mojo anchors the chef's list. Open with elotes, tuna tostada, aguachiles or shrimp ceviche. Sizzling fajita skillets, burritos and quesadillas fill the middle. Reservations are taken.
