Downtown Melbourne's country bar keeps its kitchen going late, and the room fills once the line-dancing lessons start. Free lessons run Wednesday through Saturday evenings, and nine Mardi Gras-style frozen cocktail machines churn behind a full liquor bar. Food is cooked to order: signature grilled cheese sandwiches stacked with pulled pork, buffalo chicken or pot roast, the HC Chicken Sandwich, The Creek BLT, the Roman Burger piled with hard salami and provolone, a Rattlesnake burger, a patty melt on Texas toast. Spinach-artichoke dip, cheese-stick triangles and cinnamon biscuit bites open the card. Kitchen runs late; the dance floor runs later.
