CVI.CHE 105 is Chef Juan Chipoco's Peruvian restaurant group, born in Miami in 2008 and now spread across the metro. The name is the promise: ceviche in many registers, from the plain classic of white fish, lime and limo pepper to the smoked-rocoto Pimentel and the Nikkei tuna tartare with quinoa pop. Around it, papas a la huancaina, causa limena, veal-heart anticuchos, octopus in anticuchera sauce and Peruvian scallops under aged parmesan. Nikkei sushi rolls acknowledge Peru's Japanese thread. The pisco list runs deep, sours and chilcanos included. The rooms are loud and busy, and the fish turns over fast.
