A Cuban kitchen on wheels working the Tamiami Trail through Port Charlotte, Punta Gorda and North Port, and the thing to know is that it fries beautifully. Whole red snapper comes out crisp and unfussy. So does masa de cerdo, chicharron served with Cuban tamales, and fried chicken done the Cuban way. Beyond that: bistec de res, churrasco, smoked chicken, pork steak, and Cuban sandwiches built with either beef or pork. Tostones, yuca fries, sweet plantains and red beans on the side. Croqueta and ham-and-cheese sandwiches as well. Mamey, mango and guava batidos in twenty-four ounce cups. Portions land generously.
