Peruvian fusion off the northbound Palmetto in Doral, run by the Encalada brothers as one of their several Peruvian concepts. Ceviche is the point: ceviche tradicional, ceviche de mercado, a trio de ceviches de pescado, tiraditos alongside. Around them sit tequenos stuffed with lomo saltado, boliyucas fried yuca balls in huancaina sauce, octopus skewers in anticuchera sauce, mini tacu tacus with beef tenderloin and quail eggs. Mains run to lomo saltado flambeado, corvina a lo macho, fettuccine a la huancaina with lomo saltado and arroz chaufa amazonico. Craft beer and cocktails; a patio under palms.
