Bill and Theresa Brooks, professional chefs for more than twenty-five years, launched their own pit-smoke truck in the summer of 2016 and have run it as a two-person operation since. Winters find Dueling Chefs Smoke-n-Grille working Titusville; the rest of the year the truck heads north to New Hampshire. The pit turns out pulled pork, smoked chicken, and Texas-style brisket alongside homemade artisanal sausages, a barbecue chicken quesadilla, and a smoked corned beef Reuben. A pineapple-jalapeno sausage topped with Thai slaw shows up as a rotating special. They cater everything from a small dinner party to a five-hundred-guest pig roast.
