An open kitchen, a sushi bar and a wall of steam — Hokkaido Ramen House on US-441 bills itself as the only Japanese ramen restaurant in Lake County, and it builds the menu around the bowl. Tonkotsu is the anchor: pork-bone broth with chashu and a soft-boiled egg, with mushroom, vegetable, beef-bone and crispy-onion-and-corn variations for anyone wanting a different angle on it. The sides pull their weight too — crispy fried gyoza, fried wontons with sweet chili, fried squid under cheese sauce. Sushi and milk tea round it out. Small room, serious bowls.
