Edgewater, and a room that wants your full attention. IKO came from Francesco Raveggi and chef Guillermo Gassan, built on an interest in neurogastronomy — how the brain reads flavour — with a mural of bonsai and calligraphic strokes at the door and a five-seat bar inside. The Wagyu Bar is the draw: A5 cooked tableside on hot stones, including a truffled sukiyaki cut. Elsewhere, yellowfin tuna tartare arrives with truffle-Parmesan arepas, salmon belly with lychee, lobster in truffle butter. Guests mention the sushi and the attentiveness in equal measure. Japanese fusion with a thesis behind it.
