IL PASTAIOLO – Restaurant
Handmade pasta is the whole argument at Il Pastaiolo, a Neapolitan-style trattoria on Collins Avenue in South Beach. The kitchen rolls it in house and then builds around it: rigatoni carbonara with roasted guanciale, pecorino and black pepper; linguine with whole Maine lobster and cherry tomatoes; ravioli stuffed with lobster meat and ricotta under a cheese fondue. Gnocchi cacio e pepe arrives with truffle. Diners repeatedly single out two things - the texture of the pasta itself, and servers who work the table warmly without hovering - and note the bill lands softer than the address suggests. South Beach Italian without the surcharge.
