Up a side road on the edge of Arba Minch, JEBM cooks lake fish in full view of the room, and the kitchen being open is half the show. Tilapia arrives whole or as tibs; Nile perch turns up in a fish goulash, crisp at the edges and finished in fresh tomato sauce, with fish fingers for anyone less adventurous. Travellers passing through say the same three things again and again: the fish is genuinely fresh, the service is attentive, and the prices go a long way. A fish house that knows exactly what it is.
