On Gateway Boulevard in Boynton Beach, K & L runs hot pot the fun way: a magnetic conveyor sends raw meats, seafood, vegetables, noodles and tofu past your table, and you cook it yourself in whatever broth you picked — three of them vegan. Eat it as soup or strain it onto a plate; nobody minds. The variety is the whole point, and diners consistently admit they underestimate how long they end up sitting there.
