The kitchen cooks paella properly — Valenciana with chicken and vegetables, a seafood version, and arroz negro stained with squid ink. Around it sit tapas-counter staples: boquerones en vinagre, pincho de tortilla española, cured jamón and Spanish cheeses cut to order, with tarta de Santiago to finish. Ropa vieja covers the slow-cooked end. You can eat in or take the whole thing home. Spain, condensed into one small shop.
