Los Gallegos is a family-run Spanish kitchen in Miami where pulpo a la gallega comes dressed in paprika and oil, gambas al ajillo arrive still bubbling, and the paellas, seafood or negra with squid ink, are built to order. Ham croquetas, tortilla espanola, bacalao a la vizcaina and grilled lamb chops round it out, with Basque cheesecake to close. Unhurried, traditional, and confident enough not to chase trends.
