A downtown Sarasota pizza and wine bar that builds almost everything from vegetables and still tastes indulgent. The crust is made in house and cold-fermented at least 48 hours, then topped with truffled mushrooms and cashew mozzarella, or nduja sausage with fermented honey and San Marzano. Off the oven: fried artichokes under black garlic-truffle mayo, walnut-lentil-mushroom meatballs in almond ricotta, house truffled potato gnocchi, spaghetti all'Amatriciana with pork belly. Vegan, vegetarian and dairy versions sit side by side without ceremony. Plant-forward cooking that never announces itself.
