Madela Pizza & Pasta – Restaurant
Chef Tal Gol built Madela around a hybrid oven — Middle Eastern tabun technique married to traditional brickwork, fired with local wood logs — and set it where diners on Beverly Boulevard can watch the dough go in. Sourdough pizza and pasta are made fresh daily from Italian flour, and the sauces get rebuilt nightly across Italian, Spanish, Middle Eastern and Japanese lines. A Mediterranean breakfast has since joined it: shakshuka, warm breads, eggs, roasted vegetables, dips. The name comes from the Yiddish for a young girl. It behaves like one — bold, quick, unfussy.
