MARABU – Restaurant
A Josper coal oven sits at the centre of Marabu, four floors up at Brickell City Centre, and almost everything of consequence goes through it. Chef Jorge Cabrera's cocina de autor reads Cuban and cooks modern: ropa vieja slow-braised in criolla sauce, lechon asado under Cuban mojo, short ribs al carbon in green apple mojo, wood-fired octopus with mojo rojo. Open with ham croquetas, the Marabu ceviche in aji cachucha leche de tigre, or maduro tentacion. Sides run to moro rice, tostones and tamal en cazuela. Cuban cooking, turned all the way up over charcoal.
