Cincinnati has bought its bagels here since 1969, and the method has not moved: high-gluten unbleached flour, no preservatives, no butter or oil, boiled in water and then baked directly on stone shelves. Marx runs more than thirty varieties out of the Kenwood Road bakery on any given day, kosher throughout. Ownership passed from John Marx to YY and Rena Davis in 2019, with the recipe and the routine kept intact. Regulars judge the place by whether the bagels are still warm when they reach the counter — and they usually are. Fifty-plus years, one method.
