MIAMI CHA CHA CHA – Restaurant

Wynwood, evenings only, and the room runs on Mexico City energy with Baja seafood at the centre of the plate. Cha Cha Chá opened here after starting in Mexico City and building a following in Los Angeles, and the raw bar is where it makes its case: aguachile negro with poached shrimp and avocado in an inky onion-ash sauce, a chutoro aguachile cut with cucumber and jamaica, tuna tostadas under crisp fried shallots, oysters dressed in chamoy and tajin. From the kitchen, salbutes de pollo and confit pork carnitas. Happy hour runs early in the bar and lounge. Loud, bright, worth the reservation.
