MINCA – Restaurant
Named for the Colombian mountain town, Minca opened in 2025 on the Studio 24 patio on Northeast 24th Street with a menu that sits between Latin comfort food and burger bar. The handmade burgers lead: the Minca with fried egg, caramelised onion, mozzarella and house sauce, the Argentinean with chorizo and chimichurri. Entrees run to Colombian mazorcada, chicken lasagna in béchamel, and a ribeye plate with homemade fries. Empanadas, fried yuca and sweet plantain cover the antojitos, and there are greens-and-protein bowls for anyone showing restraint. Late on weekends. A young kitchen with a clear point of view.
