Chef Renato Viola's pizzas are thin, blistered and built on dough left to rise naturally for 72 hours before it ever meets the oven, and the Doral shop on NW 53rd Street turns them out to a soundtrack of fifties rock. The draw is the star-shaped pies, whose folded crust points are stuffed with soft cheese: the Star Luca leads a lineup that runs to more than twenty varieties. The Coffee Paola, with gorgonzola, honey, coffee and spicy calabrese salami, is the one people dare each other to order. A burrata bar and big antipasti salads fill out the table. Finish with the Nutella pizza.
