Novikov Miami is the first US outpost of the London-born Pan-Asian group, and it occupies the ground floor of the Met 1 building on South Biscayne Boulevard downtown. The kitchen splits between a robata grill, a wok section, dim sum and a sushi counter, all in one high-gloss room built for long dinners and later drinks. Lunch service runs midday, dinner from six, and Fridays and Saturdays stretch to midnight. Saturday lunch is a recent addition. Downtown Miami has a lot of expense-account rooms; this one actually cooks.
