Twelve floors above Brickell, Vista Rooftop Bar & Lounge wraps the Novotel's pool deck with a skyline view and a 1950s Latin-America look. The kitchen sends up bright, shareable things: classic ceviche of mahi in leche de tigre with cancha and plantain chips, short rib buns, and a run of cocktails headed by the Vista Pisco Sour. Lunch starts at eleven and the bar runs to 11.30pm on weekends, with happy hour weekday afternoons and pool day parties on the calendar. Reservations are taken. Sunset is the whole point.
