A Brickell Avenue dining room built around one ingredient. Ockap puts premium Ossetra into every course of a menu developed in Paris with Ducasse Conseil, and founder Oscar Andres Brenes is explicit that caviar is the foundation here rather than a garnish. The signatures run caviar croquetas, tagliolini in dill cream, sea bass under champagne sabayon, and fried chicken with caviar - the one dish that tells you the room has a sense of humour. Tins are sold the traditional way, on mother of pearl, never metal. Singular, and deliberately so.
