The oven does as much work here as the griddle. At the Doral branch of The Original Pancake House, on NW 41st Street, the Apple Pancake is baked to order with fresh granny smith apples under a Sinkiang cinnamon glaze, and the Dutch Baby comes out of the same oven with whipped butter, lemon and powdered sugar. Around them sit Swedish pancakes with imported lingonberries, potato pancakes with sour cream or cinnamon applesauce, sourdough French toast, and a house corned beef hash of kosher corned beef, potatoes, onions and cream. The orange juice is squeezed fresh. Early doors, early close: breakfast is the entire point.
