The Brickell Bay outpost of the Lima-born Nikkei group that has been putting Peruvian ingredients through Japanese technique since 2002, and the only one of its ten restaurants in the United States. The raw bar is where it lives: ceviches in rocoto leche de tigre with crispy snow crab, tiraditos of bluefin with Peruvian chilli and sepia crackers, Hokkaido scallop nigiri under truffle butter, a cecina nigiri of Amazonian smoked pork with kimchi honey. Pisco cocktails carry yuzu and matcha. Two hundred curated playlists run behind it all. Dark, loud, precise.
