OSSO – Restaurant
Ossobuco is chef Guillermo Eleicegui's open-fire kitchen in Miami, where the wood grill does most of the talking and the vegetables get as much thought as the beef. The Wood Fire list runs from a ten-ounce Angus skirt to a fifty-ounce black Angus tomahawk and a house-cured picanha, everything finished with herb butter, chimichurri and caramelised shallots. Dry-aged branzino and salmon a la brasa come off the same coals. Around them sit sweet and sour cauliflower with citrus cream and peanuts, grilled baby carrots in goat cheese crema, ossobuco croquetas, ricotta gnocchi in ossobuco ragout.
