Sanduches Don Pepe has been making Ecuadorian sandwiches since 1950, and three generations later the recipes have not been modernised out of recognition. Pork is the centre of it - slow-cooked, pulled, piled into rolls - alongside the typical Ecuadorian pork platters that anyone homesick will order without reading the menu. Counters run across Miami-Dade and Broward, from Wynwood to Hollywood, all of them quick, cheap and busy at lunch. Regulars come for one thing and get it, every time, exactly the way it was seventy years ago. Not a concept; a family recipe that happens to have locations.
