SANKAUY – Restaurant
Sankuay cooks chifa - the Cantonese-Peruvian cooking that came out of Chinese migration to Lima - from a counter at Julia & Henry's on East Flagler Street in downtown Miami. The dim sum side runs to fried pork wontons and steamed shrimp siu mai; the wok side turns out chaufa, the Peruvian fried rice that is the cuisine's calling card, alongside the rest of the stir-fried list. It opened as a pop-up and stuck. Lunch through late evening, later at weekends. A genuinely specific kitchen in a food hall that could have settled for less.
