Trattoria Di Vakis is built around a single idea: pasta made by hand, fresh and organic, with sauces cooked daily and nothing held over. You pick the shape, including fettuccine tinted with carrot, beet or black kale, then pair it with pomodoro, alfredo or turkey bolognese; the rainbow fettuccine is the one people photograph. Past the pasta counter sit eggplant parmigiana, chicken lasagna and spinach-and-ricotta manicotti. Vegan-friendly and non-GMO throughout. Small, unfussy, and unusually transparent about what goes into the bowl.
