The kitchen leans on the Tabla Tumbao of Iberian cured meats and Spanish cheeses, garlic-and-olive-oil grilled octopus, a properly pressed Sandwich Cubanito with ham, roast pork and croquetas, and Grandma's Bandeja Habanera of moro rice, slow-roasted pork and fried yuca. The menu shifts with what the chef finds that morning. Mojitos and Cuban daiquiris are made from scratch. Dinner as a night out, not a stop on the way to one.
