Wayan is the Vongerichten family's Indonesian project — a warm, low-lit Miami room where Southeast Asian pantry work meets French technique. The kitchen sends out tuna tartare with lime and chili, crisp-skinned chicken with sambal, noodles and rice dishes built on shrimp paste, lemongrass and coconut, and a short list of grilled mains. Portions are built for the middle of the table, and the spicing is confident rather than cautious. Fresh, sharp and genuinely different from the rest of the neighborhood.
