Eighteen hours of smoke for the brisket, fifteen for the pulled pork, six for hand-cut St. Louis ribs — 3 Island G's is a South Florida barbecue truck where the clock does most of the work. Chef Gregory George runs it with his son and his daughter: three Georges, three islands. Smoked rib tips and wings arrive in garlic parmesan, jerk or lemon pepper, and the menu widens into grouper fingers, crab cakes, salmon alfredo, mac and cheese, sweet potato fries. Based in Hollywood, it rolls from Florida City to Naples and up to West Palm Beach. Follow the smoke.
