Named for Patrick Smith's novel about old Florida, this steakhouse inside Rosen Shingle Creek trades on cattle country and cypress swamp in equal measure. Linz Heritage Angus beef anchors the menu, cut thick and put over fire. Around it sit Little Creek frog legs, gator chowder, fresh local seafood, baked sweet potato with honey butter, and Gator Drool beer-braised collard greens. Produce arrives from Emma's Creekside Farm, the resort's own culinary garden, and the wine list runs long. It carries a AAA Four Diamond rating.
