AMARA AT PARAISO – Restaurant
Waterfront dining on Biscayne Bay from James Beard Award winner Michael Schwartz, with a wood-fired grill at its centre and boats drifting past the terrace. The cooking is Latin-leaning and ingredient-driven: Redland guava barbecue ribs with green apple slaw and aji amarillo dressing, whole roasted cauliflower with romesco, tahini and pickled onions, shrimp empanadas, duck confit, wood-grilled rib eye. Caviar service runs alongside the cocktails, built on Black River caviar, including a martini garnished with caviar-stuffed olives. Weekend brunch takes over the bayside deck; coffee semifreddo closes dinner. It is dressy without being stiff. Sunset is the hour to book.
