The dough ferments forty-eight hours; the oven runs hot enough to finish a pie in ninety seconds. Side A keeps it classical with Margherita, Bianca, Four Cheese, Vegetarian, Meats and a Mediterranean of prosciutto, dates and balsamic. Side B, the Remixes, is where it gets loud: Hips Don't Lie with sweet plantain, ham and corn; Three Little Birds with jerk chicken and hot honey; Hunger Strike with jalapeno and red pepper flakes.
