AUSTIN REPUBLIC #2 – Restaurant

Cowboys, luchadores and aliens all get a welcome at this US Highway 1 cantina, where Texas smoke meets Mexican classics and the bar runs late into the weekend. Brisket turns up everywhere: chopped into gringo tacos, folded into a quesadilla, ground into the A.R. burger. Birria arrives with ancho chile consomme, and the same braise fills egg rolls. Friday through Sunday the pit sends out smoked brisket, pork spare ribs, pulled pork and rotisserie chicken by the pound. Yuca tots, Mexican corn ribs and dry-rub smoked wings anchor the starters. Closed Mondays. Come hungry, and stay late for the tequila.
