Family-owned and independent, Azul sits on 7th Avenue in Vero Beach, in the room that until recently traded as Clase Azul and now states plainly that it has no tie to the tequila brand. The menu is long and made from scratch: shrimp, fish and pineapple ceviches, street corn, tableside guacamole, then burritos named for beach towns, enchiladas cancun under queso sauce, and fajitas that arrive on a cast-iron skillet or in a lava-rock molcajete. The shrimp soup, with zucchini, cilantro and rice, deserves attention. The bar stakes its whole name on margaritas. Open seven days, and later at weekends.
