BAMBOO / Healthy Foods builds bowls to order in a Coral Ridge Drive unit in Coral Springs, and it is unusually specific about how: hand-washed produce, small-batch prep, extra virgin olive oil only, no seed oils. Custom bowls start with a base and finish with a protein, whether beef tenderloin tips, chicken breast, Norwegian salmon, white shrimp or super-firm tofu. Five Global Bowls cover Chinese, Hawaiian, Italian, Mediterranean and Mexican; the Hawaiian pairs grilled salmon with jasmine rice, mango, sunomono and rainbow slaw. Acai is soft-served rather than blended. Smoothies, freshly pressed juices and protein shakes round the board out.
