The Fernandina Beach kitchen turns out omelettes to order, traditional eggs benedict and Eggs on the Bayou, biscuits with sausage gravy, buttermilk, blueberry and pecan pancakes, a Belgian waffle, bagel and lox, and the C.S.X. breakfast sandwich. Bubba specials go further: Mama Helen's fried chicken and waffles, fish-n-grits, steak and eggs. Grilled or blackened Atlantic salmon covers the lighter end.
