Brooksville barbecue that opens at six in the morning, which is the tell: this is a smokehouse running a full country breakfast alongside the pit. Eggs, corned beef hash, chicken and waffles and housemade sausage gravy give way at eleven to smoked meat — the Original Hog sandwich, a brisket melt, the Dual Smoke, a pulled pork grilled cheese, pork spare ribs by the half rack. Southern suppers cover meatloaf, liver and onions, country fried steak. Sides are scratch-made: collards, fried okra, mac and cheese, baked beans, sweet potato fries. Doors close at two in the afternoon, noon on Sundays.
