Chef John Calloway's Orlando taqueria treats Mexican cooking as a sourcing exercise first: real masa, daily catch, produce that shows up on the plate. Tacos are the point. Achiote pork is slow-roasted in banana leaf under pickled onion and habanero salsa; the Black Rooster asada adds applewood bacon and Oaxaca cheese; smoked greens layer kale, shiitake and plantain. Around them sit guacamole mashed to order, ahi tuna ceviche with mango and coconut milk, a pork tamale, and pozole in both verde and rojo forms.
