A Chongqing specialist on Turkey Lake Road in Orlando, built around a single dish and confident about it. Thinly sliced basa is poached in sauerkraut broth and served in three registers — green pepper, lemon and tomato — each sour, fiery and deeply savoury in a way most local Chinese menus never attempt. Around it sit crispy chicken, shredded tofu in sauce, and a cucumber salad with peanuts to cool the palate. Noodles and soups round out the list. Doors open half past eleven daily, running to half ten midweek and eleven at weekends, with carryout and delivery running alongside.
