The original. Bolay opened here on South State Road 7 in February 2016, and the format has barely changed since: pick a base, a vegetable, a protein, a topping and a sauce, then watch the bowl come together. Chopped kale salad, forbidden black rice, pesto noodles and Asian sweet potato noodles form the foundations. Teriyaki chicken, rotisserie chicken thigh, garlic pepper steak, roasted coho salmon and miso glazed tofu sit on top, finished with ginger turmeric, herb pesto or smoky chipotle. Everything on the menu is gluten free. Regulars cite the portions, the price and the speed of the line.
