Lobby level of the Hilton Miami Downtown on Biscayne Boulevard, doors open at six in the morning, and a menu that borrows from the Caribbean, South America and Europe. Brisa Bistro serves breakfast then lunch: buttermilk pancakes, a cheesesteak and eggs sandwich on poppy brioche, poached eggs with avocado toast, the 1601 omelet, skirt steak and eggs. Midday brings conch fritters with chipotle aioli, beef empanadas, fish tacos, the 1601 burger on a short rib and brisket blend, margherita pizza, and Miami churrasco with yucca fries and chimichurri. The wine list spans Old World to New. Kitchen closes at two.
