West Palmetto Park Road, downtown Boca, and a counter that moves fast at lunch. Bubbakoo's has been calling itself Mexican fusion since 2008, when Paul Altero and Bill Hart opened the first shop on the Jersey shore, and the format is still choose-your-vehicle: burrito, bowl, taco, quesadilla, nachos or taco salad, then protein, then sauce. The house oddity is the Chiwawa, a panko-crusted fried rice-and-cheese ball under nacho cheese. Birria Tacos and the Birria Dilla come with consomme. Curly fries, tater tots, queso and guacamole on the side, mini churro bites after. Not subtle, and not remotely trying to be.
